Domaine tortochot - charmes chambertin 2019the domaine tortochot is located in gevrey-chambertin, burgundy. The estate has belonged to the tortochot family for 4 generations. In the 19th century, Paul Tortochot was a modest winegrower in the Place des Marroniers. His son félix épousa louise liébaut from neighboring morey saint denis. Gabriel, félix's son, ran the 12-hectare estate for many years before retiring to leave the reins to his two daughters, brigitte and chantal. They have 4 village appellations, one of which is morey saint denis. The domaine's objectives are to protect the natural ecosystem, the flora, animals and insects in the soil, to place greater emphasis on soil life and to ensure the survival of local flora and fauna. The entire vineyard was converted to organic farming in 2003, with certification in 2010.Grapes are harvested by hand, after having been pre-sorted on the vine to remove those that are not perfectly healthy or sufficiently ripe. The bunches of grapes are entirely picked and then lightly crushed to release the juice and promote fermentation. The berries are then placed in vats and cooled to between 14 and 15°C. Temperature control allows a pre-fermentation maceration of 4 to 5 days before fermentation begins. Once fermentation has begun, the must is de-stemmed at the end of each day, and the cap is pigmented twice a day. The must is analyzed to determine alcohol and acidity levels, and to measure chaptalization. Fermentation takes place without the addition of cultured yeast. Once fermentation is complete, the wine is devatted and then pressed. Free-run juice and press juice are blended. After allowing the juice to settle for 24 hours, the wine is transferred to the ageing cellar, where it is matured in new oak barrels (100% for grand crus, 50% for premier crus and 25% for village appellation wines). The wines are bottled after 15 to 18 months of barrel ageing.cépage : 100% pinot noir
