Elegant & complex. After complete destemming and sorting of the harvest, fermentation of the must begins spontaneously, thanks to indi- genous yeasts. Fermentation lasts around 30 days, under constant temperature control. This process favors the fruity expression of Cabernet Franc. Bottling takes place the following autumn.
