In a few words ...
Harvesting takes place very early in the morning to extract juice at low temperature. The must, generally extracted by bleeding, is kept at 8°C throughout the clarification phase. Once the juice has been settled, it undergoes fermentation, which lasts between one and two weeks at a stable temperature of 18°C. The wine is then stabilized and aged in vats for 4 months, before being bottled.
