Assembly : 100% syrah vinification : the grapes for the "sainte-epine" cuvée are harvested by hand at optimum ripeness. vinification is carried out in the traditional way in open concrete vats after three days of cold pre-fermentation maceration. Fermentation continues at a controlled temperature of 28-30°c. Pigeage and remontage are carried out daily for ten days. Total vatting time can reach twenty days. The wine is aged for fourteen to sixteen months, half in new barrels and the other half in one-year-old barrels. The barrels are regularly topped up. TASTING : dark ruby in color, with hints of violet. the nose develops aromas of black fruits and spices, enhanced by a few mineral and finely woody notes. With good concentration and purity, the wine reveals a sequence of complex aromas of different expression but equal intensity.
