In a few words ...

DOUBLE-LIE is distilled with the double lees usually contained in the vin de chauffe. This cognac contains 200 mg/L of esters. That's three times the level obtained with conventional lees distillation. It's the Maillard reaction between the lees and the copper in the alembic during the cooking of the vin de chauffe that enables this exceptional extraction of esters. This unique technique gives DOUBLE-LIE incomparable aromatic intensity.
