The grapes are macerated and fermented for 3 weeks in open vats. The vats are pumped over twice a day to extract the desired tannins and color. The temperature is controlled so as never to exceed 28°C throughout the vinification process, thus preserving all the aromatic qualities of our wines. After pressing, the wine is transferred to barrels in the cellar, tempered to between 12 and 16°C, where they complete their alcoholic fermentation. Malolactic fermentation takes place naturally in the barrels. The wine is bottled at the estate after maturing in barrel for 20 months. The average age of the barrels used is 2-4 years.
