In a few words ...
We harvested our 70-year-old plot on September 1, 2022. To create this Rosé from two grape varieties - Cabernet Sauvignon and Cabernet Franc - we started at dawn to protect the freshness of the bunches and avoid oxidation. Immediate, long and gentle pneumatic pressing ensures pale color and delicate aromas. Followed by chilling at 6°C and cool fermentation at 15°C. At the end of fermentation, the lees are stirred by hand to create a subtle fatness. This Rosé is aged in a custom-made stainless steel tank.
