In a few words ...
Vinification: Removal of leaves and plant parts from the harvest. Cold pre-fermentation maceration in vats, then bleeding after aromas and color have been obtained. Very slow fermentation at a low, controlled temperature of 12-15°C. Aged on lees for 8 weeks.
