The winemaker

François Cotat's 4.9-hectare vineyard is divided between Sauvignon Blanc (70%) and Pinot Noir (30%). Both grape varieties thrive on slopes of up to 60%, composed of clay and limestone. At François Cotat, the grapes are harvested by hand. As for vinification, the winemaker excludes yeasting, settling and filtration. The result is deep, voluptuous white and rosé Sancerre, and a luscious red.
