Subsoil plays an essential role in wine quality. Gravelly, clayey or chalky, they give each Sauternes commune its own personality The Sauternes grape varieties are : - Sémillon, which gives the sweet wine its roundness and suppleness; - Sauvignon, which gives the wine its energy and vigor; Muscadelle, which adds its muscatel aroma. These grape varieties are chosen according to the nature of the soil. That's why, although the Hayot vineyards are made up of 90% Semillon and 10% Sauvignon, each of the Châteaux in the vineyard has its own character linked to the nature of its soil.
