In a few words ...

Pomona, the exquisite ancient goddess of gardens, is the namesake of the Pommard appellation. A flurry of plots and walled vineyards clustered around a village whose beauty is wrapped in a comfortable provincial bourgeois comforter, where young Fanny Sabre began to make her mark in her early twenties, taking over the parental estate when she was barely 25. Her family envisioned her becoming a lawyer or a notary, but her love of the vine won out. Trained by Philippe Pacalet, an emblematic figure in Beaune's vineyards, she consciously pursued biodynamic viticulture, vinifying her 17 parcel-based cuvées with the precision of a Japanese katana. With some fifteen vintages under her belt, she is now at the helm of one of Burgundy's most prominent estates on the "natural" scene in search of ever greater uprightness, languishing on the prestigious terroirs of beaune, savigny-lès-beaune, meursault, volnay and pommard. In 2017, the eponymous cuvée has the elegance of a cherry that has spent the winter in a flask of kirsch, and its powdery white aligoté proves philippe pacalet's father wrong,
