The winemaker
The domain
The Devillard family is the current owner of Domaine des Perdrix, but also operates other properties in Burgundy: Domaine du Château de Chamirey in Mercurey, Domaine de la Ferté in Givry, Domaine de la Garenne in the Mâconnais, as well as Domaine Rolet, in the Jura.
Wine runs in the Devillard family. However, up until the 90s, they tended to work on the merchant side. Although they started out as winegrowers as early as 1934 with the purchase of a few vines in Mercurey, the Domaine des Perdix was not bought until 1996, still in parallel with the trading activity. Two years later, the négoce business really came to an end: the family now operates exclusively in its native Burgundy.
The vineyard
Spread over different parcels and Climats, the land totals 12 ha. Planted with the two king grape varieties of Burgundy, Pinot Noir and Chardonnay, they are farmed using the "agriculture raisonnée" method. This means meticulous, high-quality work using as few phytosanitary products as possible. This goes hand in hand with the prestige of the appellations produced: Nuits-Saint-Georges Premier Cru "Aux Perdrix" (the Domaine is almost the sole producer, owning 99% of the latter) Gevrey-Chambertin Premier Cru and Echezeaux Grand Cru, to name but a few.
The vines were recovered in very good condition, some of them original: the average age is 35 years. The high quality of the vineyards has enabled us to invest heavily in modernizing the winery: table sorting, temperature control, pneumatic punching of the cap, frequent purchase of new oak barrels (1/4 of the barrels used are new)...
Wine style
The Domaine's wines are distinguished by their deep, voluptuous texture on the palate. This is made possible by harvesting the grapes at high ripeness, followed by a delicate, natural process in the vat, with different techniques for exctracting color, tannins and matter. Most of the estate's wines are made from Pinot Noir alone, with the exception of two cuvées made from Chardonnay.
While almost 70% of the wines bear appellations classified as Premiers Crus and Grands Crus, the domaine also produces AOC Communales (Vosne-Romanée, Nuits-Saint-Georges) and Régionales. Both are vinified with the greatest care and respect for an ancestral know-how that magnifies each of the Climats from which the wines are made. This is a truly exceptional estate, albeit one that is still little-known. Robert Parker once said that "even in the great terroirs of the Côte de Nuits, there are still discoveries to be made of the highest quality".
