The winemaker

The Domain


The Devillard family is the current owner of Domaine des Perdrix, but also operates other properties in Burgundy: Domaine du Château de Chamirey in Mercurey, Domaine de la Ferté in Givry, Domaine de la Garenne in the Mâconnais, as well as Domaine Rolet, in the Jura.

Wine is a family affair in the Devillard family. However, until the 90's, it will be rather on the merchant side that it will happen. If they took up the profession of winegrower in 1934 with the purchase of some vines in Mercurey, the Perdix estate was only bought in 1996, always in parallel with the trading activity. Two years later, it is really over for the latter: the family is now exclusively exploiting in its original Burgundy.

The vineyard


Spread over different parcels and Climats, the total land area is 12 ha. Planted with the two king grape varieties of Burgundy, Pinot Noir and Chardonnay, they are cultivated using sustainable agriculture. This means a meticulous and qualitative work with the least amount of phytosanitary products possible. This goes hand in hand with the prestige of the appellations produced: Nuits-Saint-Georges Premier Cru "Aux Perdrix" (the Domaine is almost the sole producer since it owns 99% of it) Gevrey-Chambertin Premier Cru and Echezeaux Grand Cru to name a few.

The vines having been recovered in very good condition, some are original: the average age is 35 years. The high quality of the vineyard has left room for major investments in the modernization of the winery: table sorting, control of vinification temperatures, pneumatic punching down, frequent purchase of new oak barrels (1/4 of the barrels used are new)...

The style of the wines


The wines of the Domaine are distinguished by their deep and voluptuous texture in the mouth. This is made possible by harvesting the grapes at high maturity and then working them in the vat in a delicate, natural way, with different techniques of exctraction of color, tannins and matter. The majority of the estate's wines are made from Pinot Noir alone, with the exception of two cuvées made from Chardonnay.

If almost 70% of the wines are classified as Premiers Crus and Grands Crus, the domain also produces AOC Communales (Vosne-Romanée, Nuits-Saint-Georges) and Régionales. Both are vinified with the greatest care and respect for an ancestral know-how that magnifies each of the Climats from which the wines are made. We are therefore on an exceptional domain, although still unknown. Robert Parker said that "even in the great terroirs of the Côte de Nuits, one can still make discoveries of great quality".
