The philosophy of this field is "non-interventionist": static racking and no filtration, fermentation brought to completion without residual sugar, natural malolactic fermentation for more finesse and aging partly in barrels with little stirring to avoid thwart the freshness and minerality of the appellation. The analytical monitoring and regular tasting of wines guarantee the precision of the aromas.
