The winemaker

The Chardonnay of Domaine du Colombier



Since 1957, the Mothe family has been running the 55 hectares of vines at Domaine du Colombier. The vines are Chardonnay to produce dry, clear, lively and light white wines, with a characteristic yellow colour, with subtle white-green highlights. The wines are aged either in vats or in oak barrels for the Grand Cru Bougros. The vinification process is based on traditional Burgundian methods, combined with modern technical means.

The Domaine du Colombier specialises in white wine made from Chardonnay. It offers the various appellations of the Chablis region.

Petit Chablis

The Petit Chablis of the Domaine du Colombier uses vines between 10 and 30 years old. It is aged for 6 months in stainless steel cellars. It can be kept for 2 to 3 years. This wine has a limpid colour and is very fresh. Always very fruity, it is dry and light. Petit Chablis is perfect as an aperitif and is particularly suited to shellfish and seafood meals.

Chablis



The Domaine du Colombier Chablis is made from vines between 5 and 50 years old. After maturing for 6 to 18 months in stainless steel vats, it can be kept for 3 to 5 years. This mineral and fruity wine will accompany your starters and cold meats. It goes well with cooked seafood and Burgundy snails.

Chablis VV



The Chablis VV from Domaine du Colombier is made from vines celebrating their half-century. It is aged in stainless steel vats for 1 year and is recommended to be kept for 5 to 6 years. Powerful and rich in the mouth, its aromas are fine and complex. It can be served as an aperitif, with fish and is a natural accompaniment to pressed cheeses such as Comté or Beaufort.

Vaucoupin



The Vaucoupin from the Domaine du Colombier is the product of vines between 20 and 50 years old. It is aged for 9 months in stainless steel vats and can be kept for 6 to 8 years. Fine and delicate, its aromas of white flowers - acacia and hawthorn - and white-fleshed fruit, such as peach, are a perfect match for fish dishes. It is also wonderful as an aperitif.

Fourchaume



The Fourchaume from Domaine du Colombier is made from 25 to 55 year old vines. It is aged for 9 months in stainless steel vats for 6 to 8 years. Its lemon and grapefruit aromas are wonderful with scallops, fish in sauce and white meats.

Bougros



The Bougros from Domaine du Colombier benefits from the maturity of the vines from 15 to 65 years old. It is aged for one year, 20% in oak barrels and 80% in stainless steel tanks. It can be kept for up to 10 years. Powerful and elegant, Bougros offers aromas of honey, hazelnut and spices. It goes perfectly with poultry in cream sauce and morels.
