The winemaker

Chablis vines are planted on the steep slopes of the Serein Valley, on stony, clay-limestone soil (Kimmeridgian marl), which is ideally suited to Chardonnay, the only authorized grape variety. The Chardonnay grape variety is the only one allowed in the vineyard, making it possible to produce wines that are representative of the Chablis vineyard as a whole, and in particular to benefit from the specific characteristics of both banks of the Serein valley. They work on three of the four appellation levels: Petit-Chablis: 0.16 hectares, Chablis: 17.50 hectares, Chablis Premiers Crus Côte de Léchet: 1.99 hectares, Chablis Premiers Crus Fourchaumes: 0.60 hectares, Chablis Premiers Crus Montmains: 0.76 hectares, Chablis Premier cru Homme Mort: 0.15 hectares, Chablis Premiers Crus Vaillons: 0.83 hectares. The region's continental climate is conducive to good grape ripening, resulting in a wine of great elegance and finesse, renowned as one of Burgundy's finest.
