The winemaker

The Maréchal-Caillot Domaine covers 10 hectares spread over 5 towns of the Côte de Beaune in Burgundy Pommard, Chorey Les Beaune, Savigny-les-Beaune, Ladoix, Bligny-lès-Beaune. For Bernard Marechal, rigor is the basic principle. Demanding with himself, his staff and his vines, he is one of those growers whose will is to maintain, to the delight of lovers of great wines, a high level of quality and production regularity on all wines of Domaine Marechal clot and, whatever the vintage. Domaine Marechal clot, nothing is left to chance. One carries out a work at very rigorous vineyard vine per vine, bud and bud cluster by cluster. The vines are cultivated in the traditional way without chemical fertilizers and pest management, with special monitoring to limit the yield and obtain high-quality grapes. The harvest of the Maréchal-Caillot Domaine are 100% manual, green if necessary, with a first selection made by the "cutters" and a second on a sorting table before pressing. The grapes are then destemmed, pressed and macerated in tanks only with their juice. Traditional vinification in vats followed by a 12-month aging in oak barrels, 10% new oak. The area works with two coopers, with whom they have established a partnership of trust on the origin, quality and time of drying wood, the intensity and the heating time. The quality of the wines of the Domaine Marechal clot and regularity even in vintages advertised as "difficult" demonstrate a clear knowledge and a continual desire to increase to reach perfection.
