The winemaker

After a cycle of attentive care is every year that we must challenge to lead the new vintage. Domaine practice the pre-fermentation cold maceration, fermentation are therefore slowly. The pigeages are made early in the fermentation. The tastings of all vintages are daily. After pressing, the harvest is put in barrels, renewed by thirds every year and distributed based designations. Our drums have several sources (Nièvre, Vosges and Allier) and it is the assembly of each of their feature that will create the unity of the wine. After 12 to 15 months of aging, the designations are assembled in vats for melting tannins. The bottling is done at the Domaine. Singular by using varietal pinot noir and chardonnay and plural by myriads of expressions, which we seek to express other tenants. Originally, the Domaine practiced his selection plans in vineyards (mass selection). At present, a careful selection is always performed. The estate now covers 16 hectares spread over the Côte de Beaune and Côte de Nuits and offers twenty names, the regional appellation to appellation village and 1er cru and some great wines. It is through the control of yields, frequent plowing and non-use of chemical fertilizers that we respect our soils and their typical characteristics. Convinced the right balance between our work and the nature and respectful of our land, Domaine practice his treatments in viticulture.
