In 1847, by royal decree of louis philippe, the term chambertin was associated with gevrey and officially became gevrey-chambertin. Seuvrées comes from the Latin separatas. It was because the land was separated in two by the boundary between the villages of gevrey and morey that the place was named "les seuvrées". The "les seuvrées" parcel lies to the south of the village of gevrey, below the "mazoyères" and "charmes" grand cru parcels. this 2021 is best enjoyed today, for example with a beef tournedos. Remarkably defined, dense and deep, elegant, with fine tannins, it will delight you for at least another 10 years. 100% pinot noir. The vines are around 60 years old and still inherit the minerals coming down from the Combe Grisard. A very gentle slope to the east, licked clean by the first rays of sunshine, gravelly soils, earth: all these are excellent conditions for the development of a wine of exquisite suppleness. Only a few thousand bottles per year. Aged partly in old oak barrels and partly in jars, to preserve the freshness of the fruit.
