In a few words ...
The grapes are harvested by hand and completely destemmed to avoid any bitterness or undesirable vegetal aromas. Maceration lasts around 3 weeks to obtain wines with deep color, complex aromas and consequently good aging potential. Traditional vinification in temperature-controlled concrete vats - which allow fermentation temperatures to be controlled thanks to the concrete's great inertia - with daily punching of the cap and pumping-over. Alternating these two methods is a good way to obtain well-balanced wines, as the tannins are not over-extracted. The wine is then aged for 8 months in oak barrels, 20% of which are new.
