The history of the winery


The history of this family of Champagne winemakers began in 1900, when Hermas Saturnin Devaux planted a few acres of vines in the village of Colombé-le-Sec. One of his sons, Alexandre, continued the viticultural work begun by his father. He also exploited his domain in other activities of culture and breeding, because the production of wine did not allow him at the time to generate enough income. But passionate about the work of the vineyard, he was one of the founders of the cooperative of Colombé le sec.

In 1946, he planted his first rows of vines at a place called "les fleuriottes" on a micro-terroir characterized by a Kimmeridgian subsoil. These Chardonnays are today the oldest vines of the domain and they produce grapes of an exceptional quality. After the sudden death of his wife, he raised his daughters alone. One of them, Françoise, helped her father on the estate from the age of 13. She married Didier Soret and together they continued to develop the vineyard by planting vines on other plots.

In the 80's, the couple will elaborate their first Champagne Devaux Soret cuvées and start the marketing with a few thousand bottles the first years. The estate is now run by their sons, Loïc and Romaric. Passionate about their parents' work, they both studied viticulture, one in Beaune and the other in Avize. Today, the two brothers work as a team, in perfect complementarity, Loïc is in charge of the elaboration and production of the wines, when Romaric directs the vineyard and the care of the vines. Independent winemakers, they improve the estate's wine-making facilities and install a traditional wooden wine press.

The Estate


The eight-hectare estate is located in the Aube department in the village of Colombé-le-sec. It extends over the valleys and plateaus of the Côte des bar. This prestigious champagne terroir is ideal for producing exceptional vintages. The vineyard is planted with three grape varieties Pinot Noir, Pinot Meunier and Chardonnay. They are committed to preserving their land and this exceptional environment. The estate is conducted in agriculture raisonnée in an environmentally friendly approach and they have obtained the HVE certification.

Attached to tradition, but attentive to producing the best possible vintages, the Soret Devaux brothers combine the knowledge and know-how acquired through their family heritage with the most advanced modern techniques. The quality is there and the domain's vintages have received several awards, rewarding the efforts and know-how of the producers.

The champagnes


Brut Millésime Récolte 2014 is a balanced cuvée offering beautiful acidity and elegant sweetness. Made with 50% Chardonnay and 50% Pinot Noir, it is a champagne with fine, elegant bubbles and an intense color. The aromatic bouquet is dense and complex, with notes of gingerbread, brioche and candied fruits. The palate is sunny and balanced, with an exceptional fruitiness. This is an ideal champagne to serve during a dining aperitif or an evening with friends.

Brut tradition is a champagne made from a blend of the estate's three grape varieties, with 70% Pinot Noir, 20% Chardonnay and 10% Pinot Meunier. Vinified in the traditional press of the domain, with a third of reserve wine, the cuvées are then aged in cellar during 3 to 4 years. The robe is brilliant, with a beautiful light golden color. The nose offers notes of yellow fruits and the palate is fresh and fruity with flavors of peach, pear and nuances of white pepper. It has received several awards such as a star in the guide Hachette 2020, a medal in the international Gilbert et Gaillard challenge of 2021 or the silver medal in the 2018 Concours Général Agricole. It is a delicate champagne, perfect to accompany an aperitif or a festive moment.

Brut Réserve is a cuvée vinified with a quarter of reserve wine, then aged five years in the cellar. It is an easy-to-match champagne that can be served with meat in sauce as well as a cheese platter or an aperitif dinner. It is a blend of 30% Chardonnay and 70% Pinot Noir. The nose is spicy with aromas of fruit spirits, fresh nuts and toast. Like other Soret Devaux cuvées, it has received several awards, including a silver medal at the Bettane & Desseauve 2020 competition or a mention in the Hachette wine guide in 2020.
