Domaine de la borde - vin jaune 2012the domaine de la borde is located in the communes of pupillin and arbois in the jura region. The 5-hectare estate is managed by julien mareschal with respect for the terroir. The vineyard has been certified organic since 2012, and biodynamic principles are applied to all the vines. The local grapes are grown on plots whose soils and exposure reflect their individual typicity.The vin jaune comes from Savagnin vines grown on a terroir of deep grey and blue marls, with a steep south-westerly exposure and an altitude of 350 m. The grapes are hand-picked and then harvested in the vineyard. The grapes are harvested by hand, then partially de-stemmed (30%). Static cold settling is carried out for 12 to 24 hours. Alcoholic fermentation takes place in foudres. Ageing lasts 10 to 12 months on lees during malolactic fermentation, followed by oxidative ageing without topping up or racking for a minimum of 75 months.cépage : 100% savagnin
