The winemaker
The DNA of an outstanding winemaker
Jean-François Ganevat's story begins as a cellar master, for many years, in Chassagne-Montrachet with Jean-Marc Morey. In 1998, he decided to return to the Combe de Rotalier in the Jura to cultivate his own vines.
Now a legend in the wine-loving community, Jean-François Ganevat is one of those winegrowers who treat their vines like their children. His boldness and talent have enabled him to revolutionize a whole area of French viticulture, as his wines are so characterful and emblematic of their domain.
The most Burgundian of Jura winegrowers, he now lets his rigor and talent shine through on 9 hectares of vines, multiplying parcel-based cuvées (up to fifty in some years), enabling him to reveal the subtleties of each micro-terroir.
Nearly half of the estate is made up of vines over 50 years old, some as old as a century. Aging on the estate takes a very long time, a minimum of three years!
A natural estate
Since 1998, Jean-François Ganevat has been farming organically, and since 2006, the estate has gone biodynamic. As close as possible to nature, the winemaker makes wines that breathe terroir and surprise with their typicity.
Vinified without sulfur and with indigenous yeasts, each wine has its own parcel identity and singular personality. Thanks to low yields, meticulous work in the vineyard, and ageing in terracotta jars for the reds, the wines reach an extraordinary level of expression.
The reds are made from Pinot Noir (40%), Trousseau (25%) and Poulsard (30%). The wines produced are loaded with gas and offer typical terroir and natural noses.
The white wines are made with 75% Chardonnay and 25% Savagnin. The wines elegantly combine a buttery, biting edge with fruitiness and a touch of acidity, resulting in aromatic wines with quality development.
