The winemaker
The History of Clos de Paulilles
Clos de Paulilles, located between Collioure and Banyuls, was created in 1800 by the Bernardi family. In 1975, innovated by being the first to vinify Banyuls Rimage wines.
Clos des Paulilles continued its innovative momentum by being the first to vinify a Collioure with a majority of Mourvèdre and Syrah, starting in 1989. The choice of grape varieties was intimately linked to the region and its terroir favorable to these varieties.
In 2012, Clos des Paulilles was acquired by Domaine Cazes. As of 2013, the estate began a decisive shift to more environmentally friendly viticulture. The method of cultivation was revised and mechanical tillage was brought back into fashion.
2013 is also the first year of the production of Banyuls Grand Cru. From 2016, two new cuvées were offered, Cap Béar in white and in red.
The Clos de Paulilles vineyard
The Clos de Paulilles estate is located in the cove of Paulilles, labeled Grand Site de France. It extends between Banyuls and Collioure, and covers 90 hectares of a very varied terroir, of which 63 hectares are dedicated to viticulture. The Clos des Paulilles grape variety is made up of Syrah, Mourvèdre, Grenache and Cabernet.
The conduct of the Clos des Paulilles vineyard is reasonable. It aims to maintain biodiversity and do without chemical inputs. To this end, some scrubland is maintained to allow wildlife and microfauna to thrive and find refuge. In addition, copses, hedges and low walls are maintained to complete a favorable environment for animals, as well as for flora. Finally, vegetation cover is established to fight against erosion and to multiply grazing surfaces.
The biodynamics allows to work on the prevention and enhancement of the soil and the plant in their natural environment. It aims to create a perfect balance that gives more resistance to the vine. Creating harmonious living conditions between the earth, the sky, the whole ecosystem and the plant is the best guarantee for a quality grape.
The infrastructure of the Clos des Paulilles has been recently renovated, in order to optimize the production tool. The cellar has been completely refurbished. A restaurant with its feet in the water, as well as a reception site have been created to constitute a magical place dedicated to wine tourism.
