The winemaker

The History of the Domaine d'Aupilhac


The Domaine d'Aupilhac belongs to Sylvain Fadat. His forefathers already cultivated the vine on their mother's side, as well as on their father's side. However, his parents chose a different path and preferred to pursue studies at the École Normale de Saint Cloud, Sylvain's birthplace, in 1962.

However, his father had kept some of the family vineyards, which allowed the future winemaker to grow up among the vines and thus developed a passion for viticulture. Sylvain Fadat pursued studies in viticulture-oenology, complemented by a business degree.

The Domaine d'Aupilhac was born in 1989, with the first 5 hectares located on the place called Aupilhac, composed of south-facing terraces planted with Carignan. At the same time, he also became a market gardener, producing asparagus, melons, tomatoes and peaches. The first vinifications were made in old truck tanks, outside!

From 1992, the Domaine d'Aupilhac is self-sufficient and Sylvain Fadat devotes himself exclusively to his vines, abandoning the cultivation of fruits and vegetables. In 1993, he builds his cellar and equips himself to develop the exploitation. He gradually bought new plots of land, notably in the amphitheater of Les Cocalières. Then, the constructions follow one another: underground cellar, bottling cellar and storage cellar.

Sylvain's wife, Désirée, has meanwhile given up her nursing activity to work with him in the management of the Domaine d'Aupilhac.

The Domaine d'Aupilhac is divided between two terroirs: the terraces of Aupilhac and the Cocalières.

The Aupilhac terraces represent 13.5 hectares facing south, on a soil of clay, marl and limestone. They are located below the Château du Castellas, an emblematic monument of Montpeyroux dating from the 11th century.

The grape varieties are very diversified. For the reds: Mourvèdre, Carignan, Syrah, Grenache and Cinsault. For the whites: Carignan Blanc, Clairette, Grenache Gris, Grenache Blanc, Vermentino and Ugni Blanc.

Les Cocalières is an extraordinary site forming an amphitheater, with 10 hectares culminating at an altitude of 350 meters. The grape varieties are Roussanne, Marsanne, Vermentino, Clairette and Grenache Blanc for the white; Grenache Noir, Syrah and Mourvèdre for the red.

The Domaine d'Aupilhac benefits from the Mediterranean climate, with the sea 40 kilometers away. The summers are hot, the winters cool, the autumns and springs rainy. It is conducted in organic and biodynamic farming and is certified by Ecocert & Demeter.
