The winemaker

A little tour of the vineyard


A new estate we're proud to introduce to you today. Created in 2007, Domaine de Cazaban is located in the Cabardès appellation, just a few kilometers from Carcassonne. Although one of the most recent arrivals, the vineyard nevertheless covers 22 hectares. Emmanuel Taillez and Joseph Parcé took over the estate 10 years after its creation, seeing its full potential.

In fact, it's divided into 3 parts, with parcels on the Plaine de Cazaban, the foothills of the Montagne Noire and the western Minervois. All these terroirs have their own specificities and very different soils, giving our protagonists a distinct advantage in their approach to wine.

In order to concoct ever more enjoyable wines, they use grape varieties adapted to their terroir, such as Grenache, Carignan, Syrah and Mourvèdre, as well as Bordeaux varieties like Cabernet and Merlot. So there's a plethora of opportunities for the winemakers and the wines they'd like to share with wine lovers.

Biodynamics at the heart of the work


With his commitment to biodynamic viticulture, Emmanuel Taillez works some of his parcels with respect for the environment, in harmony with nature, which he considers to be of paramount importance. In fact, 13 of the 22 hectares have been certified by the biodynamic organization Demeter since 2013. To achieve this status, the estate has changed its approach to vines and wine, modifying almost every aspect of its business. Composts and preparations, combined with a particular attentiveness to the vines, enable Domaine de Cazaban to excel and surprise anyone who comes to taste its cuvées...
