The winemaker

Maury is a remarkable wine village located in the southwest of France (Catalan region). Halfway between the Priorat (Catalonia) and the valley southern Rhone, and like Priorat and Châteauneuf-du-Pape, vineyards are dominated by grenache that clings to the most rocky soils. As those of Priorat vines grow on Maury charcoal black shale. There are few other plants that can survive in this inhospitable terrain, except for the few olive trees, cherry and almond trees and red oaks, lavender, thyme and rosemary typical wild scrubland. The intense sunlight and the heat absorbed by the shale during the day spreads the night in grapes and that is maturing and smoothly. Boasting a long summer for both hot and dry vineyards can produce a very small amount of a wine rich, powerfully concentrated. The Pertuisane displays extremely low yields. The vines are between 14 and 100 years (most were planted there over 50 years) and give only 8 hl (less than a ton) per hectare. Carved by years of severe pruning, the vines are led cup without tying, and kept close to the ground on hillsides overlooking the valley. The vines are maintained and harvested by hand. Guaranteeing phenolic maturity, harvest overripe give the wines of Pertuisane ink intense color which characterizes them. The domain advocates minimal intervention in the winemaking process. The fermentation is induced by wild yeasts naturally present in the skin of grapes. He took great care of the wines that pass in a traditional basket press before being poured into new oak barrels and two wines. In accordance with the principles of Pertuisane, wines are neither fined nor filtered before bottling, which gives them great complexity, concentration and finesse behind their success in the UK, the US and elsewhere in the world.
