The winemaker

It was with the2016 vintage that I finally decided to take the plunge and produce my own wine on my own vines. my own vines. After more than 10 years spent making wines for others, I decided to use all my various oenological oenological experiences and put them to good use on my own estate to produce wines that I love and want to share. In any case, I knew that sooner or later this day would come... That's why I've taken all my time to train myself, to learn from others and to make wines that I love. learn from others and really refine the style I wanted to imprint on my wines: respect for the grape my wines: respect for the grape variety, freshness, elegance, integration and drinkability. The first stage of my training took place in Burgundy, my adopted country, which I love so much and which has given me so much inspiration. that I love so much and that has repaid me so well. I was lucky enough to work alongside François Parent of the Domaine A-F Gros and Jean-Pierre Confuron at Domaine Chanson. These two emblematic houses of the Côte taught me to respect terroirs and ripeness, and instilled in me the cult of single-vineyard wines. and instilled in me the cult of single-varietal wines. Without blending, there's no net; it's the terroir and the vintage the wine. I then moved to Bordeaux for two years. I also had the to learn a great deal from extraordinary teachers and winemakers such as Denis Dubourdieu Denis Dubourdieu, who was my oenology teacher at the ISVV in Villenave d'Ornon. After spending a few years in these two extraordinary regions, I was keen to discover the world. to discover the world, so I went on to make wine as an oenologist in Australia, California and New Zealand. All those years spent moving from one country to another, from one grape variety to another, from one way of making wine to another. to another, from one way of understanding wines to another, really helped me to understand that in oenology, even if it's vital to have models in mind, and preferably the best ones, to make to make great wines, respect for the grape variety and its pedoclimatic context is vital to to make great wines. So, in 2014, I returned to the land of my birth, the Gardie terroir in the Limoux area. My father and grandfather had helped the estate prosper and grow to its current today's 22 hectares. Until my arrival, they delivered the harvest to the cooperative winery. When I arrived, I decided to regain my independence and work the vineyard as I wished. Limoux Blanc for the Chardonnays and IGP Haute Vallée de l'Aude for the Pinot Noir. for the Pinot Noir. So, for the 2016 vintage, I produced my first two cuvées: an AOP Limoux Blanc based on Chardonnay a Chardonnay-based AOP Limoux Blanc and a Pinot Noir-based IGP Haute Vallée de l'Aude. After having made so much wine for others, it's very special to be able to work on your own plots. When you make wine for others, you always feel a sense of distance and detachment, even if you're fully involved. involved. When you make wine on your own land, you give yourself away, you reveal yourself, you take risks. From now on, I hope you'll enjoy my wines as much as I enjoyed making them.
