The winemaker

The vineyards of Saint Chinian, appellation covering 20 villages spread between the Cathar country and the Faugères one hand, and between the foothills of the Cevennes and Biterroise plain with the Mediterranean Sea on the other. Terroir crucial element for the quality of a wine, is composed of clay and limestone slopes but especially shale that give the wine a characteristic flexibility to Languedoc vineyards. A La Maurerie among Depaule, wine is a family affair. Joseph, born in 1788, already cultivated shale slopes. Today, Michel Depaule graduate in enology, is head of the Area of ​​thirty hectares. He inherited from his grandfather, another Joseph, and his father John the respect of the traditions and culture of the vineyard, combines it with modern techniques. With his desire to always do better, he continues the tradition of excellence and performs every year the miracle of transforming its grapes bursting with sunshine into a delicious nectar.
