The winemaker

Mas Baux is located in the southern part of the Occitanie region, near the Mediterranean Sea. These lands have a long history of viticulture dating back to the Roman era and have alternated periods of cultivation and periods of abandonment. Now run by Serge Baux and his wife, Mas Baux offers organic wines in all three colors and strives to produce authentic, powerful and elegant vintages, reflecting all the beauty of this exceptional terroir.

The producer


In the heart of the garrigues, Mas Baux covers 20 hectares and 12.5 hectares are devoted to vines. The Romans had already identified this exceptional terroir for wine production and the first vines were planted on this land over 2000 years ago. Afterwards, the vineyard fell into disuse before being reborn in the 18th century when Mr. Durand bought the property and had the farmhouse built.

Serge and Marie Pierre Baux became owners of the estate at the end of the 90s. Charmed by the soul of this unique place, they undertook extensive restoration work in the wine buildings and by replanting the vineyard.

The Estate


The exceptional location of the land, situated on a very high terrace made up of rolled pebbles and a clay subsoil, offers a perfect climate for growing vines. High sunshine, wind and sea spray combine to provide the vines with perfect growing conditions. Quality grapes then give exceptional wines, powerful and fruity with intense aromas, which express all the beauty of this land.

The domain is conducted in organic farming to preserve nature and biodiversity. Thus, next to the vines, it hosts beehives, a vegetable garden worked in permaculture and spaces favoring the presence of birds, insects and bats. The vineyard has old vines, 70 years old, and the grape varieties are Grenache, Mourvèdre, Syrah, Muscat Petit Grains and Cabernet Sauvignon. The yields are controlled in a constant search for quality. Harvesting is done early in the morning and until mid-day at the latest to preserve freshness. The wines are then matured in stainless steel vats or oak barrels depending on the cuvée.

The wines


Lipstick is an elegant rosé wine with rose gold hues in IGP Côtes Catalanes. It is a subtle and delicate cuvée with a palette of floral and vanilla flavors.

Baux Blond is a brightly colored dry white in IGP Côtes Catalanes. This 100% Muscat Petits Grains offers a complex aromatic bouquet that is very appealing with aromas of lime, pear, honeysuckle and notes of candied citrus.

Loulou is a no-sulfite-added IGP Côtes Catalanes red created to celebrate the birth of Louise, the couple's baby daughter. It's a fresh, intense and fruity wine with notes of red fruits, fresh figs lifted with hints of licorice.

Red Sun is a Côtes du Roussillon PDO vintage. It is a complex red wine with an aromatic palette mixing vanilla, black fruits, hazelnut and spicy notes.
