The winemaker

Our soils in the AOC Terrasses du Larzac terroir, which are highly suited to vine-growing, are composed of highly draining limestone pebbles for the red grape varieties and clay-limestone for the white grape varieties. We made the transition to organic farming fairly quickly, with organic certification by Ecocert as of the 2015 harvest. The geographical location of our terroir means that we benefit from ideal weather conditions for obtaining beautiful fruit. What's more, in summer, grape ripening very often benefits from strong temperature amplitudes between day and night. Our intervention in the cellar is kept to a minimum, with the aim of ensuring maximum respect for the grapes. To achieve this, we use a conveyor belt to bring the harvest into the vats without pumping. Vinification is carried out in the traditional way, with temperature control. Depending on the cuvée, the wine is matured in stainless steel vats, wooden foudre and large oak barrels (300 and 400 liters). The wines are bottled on the estate.
