    Hand-harvested in small 12kg open-work crates, grapes transported to the winery by refrigerated truck. Vinification in 50hl truncated-cone wooden vats, using the "lasagne" method: a layer of whole grapes at the bottom of the vat (about 25cm thick), followed by destemmed grapes sorted on a sorting table, and finally a layer of whole grapes about 20cm thick. The proportion of whole grapes is therefore around 30%. The grapes are kept at a low temperature (18°C) for 3 to 4 days (pre-fermentation cold maceration). The temperature is then gently raised, allowing fermentation to start slowly. A few short pump-overs are carried out. When fermentation is about halfway through, one or two gentle punchings of the cap are carried out to break up the top layer of whole grapes and gently mix it with the destemmed grapes. Fermentation ends gently, the temperature is raised to around 25°C and the vat is kept warm for a further 3 to 4 days, tasting every day to decant and press before hard tannins begin to show. Pneumatic pressing and separation of free-run and press juices. Putting into hot barrels and malolactic fermentation in barrels. Aged for 9 months in 4- and 5-year-old Chassin oak barrels and 10% new Rousseau barrels.

With its supple tannins, fullness, freshness and fine grain, the palate is enchanting, delivering a full-bodied, harmonious version of the Occitan grape variety.

    That's what makes it so good! I love Languedoc Pinot Noir when it's well done, and in this case it's very well done. Lovely fruity notes on the nose that reveal cherry on the palate. Very appreciable length on the palate. Easy to drink. Aerate 1/2 hour before serving.
