Hand-picked in crates Bunch sorting De-stemming No crushing Cold pellicular maceration in vats from 24 to 72 hours Pneumatic pressing Light cold settling Natural fermentation in new barrels for Marsanne and 1 and 2-wine barrels for Grenache Blanc, Roussanne, Maccabeu and Chenin Blanc. In barrel for nine months on lees, with stirring of the lees. Blending of the best barrels from each plot, then 1 month in vats before bottling.
