"terroir: the blend comes from a clay-limestone terroir resulting from the scree of the Larzac plateau, in the Pas de l'Escalette area. A relatively cold, windy microclimate with cool nights, conducive to the wine's freshness, fluidity, complexity and finesse. The altitude of this terroir marks the upper limit of vine-growing. Commune de lauroux.vinification: total destemming without crushing, each plot is vinified separately. Traditional vinification, working the must by punching down and/or pumping over. Vatting period: 3 weeks.ageing: 18 months in concrete vats. Aroma

A wine with notes of wet wood, slightly pared (reduction), followed by an explosion of ripe red fruit (blackcurrant, raspberry and blackberry), rubber, bark, new leather and iodine.
