In a few words ...

Both plots are harvested at phenolic maturity. The grapes are pressed directly. The musts are carefully settled in vats and kept cold. Fermentation is thus prolonged for over 3 weeks. The musts are racked several times to enhance the wine's aromatic purity and minerality. The wines are protected from oxidation to avoid the unnecessary addition of sulfites (SO2). Aged for 6 months on fine lees in vats after vinification. Yields of 18 hl/ha.

Aroma

The nose is very intense, with notes of citrus and exotic fruit.

Taste

Superb balance on the palate, measured out to perfection: fatness is present, but its acidity eliminates any heaviness, and the aromas, identical to the bouquet, are persistent and accompanied by a fine salinity. L
