Native yeasts. No enzyming, no chaptalization, no acidification.ageing: in vats on fine lees, approx. 8 months. Bottling: without fining or filtration.Tasting notes: the nose opens with notes of white fruit and white flowers, then evolves to more gourmet citrus touches. On the palate, the aromas found on the nose blossom around a straightforward mineral framework, the whole blossoming thanks to a subtle touch of fat."
