Fermentation: Indigenous yeasts, traditional vinification, without excessive intervention - the objective is the pure expression of terroir. Maturation: Mostly in stainless steel vats, some in foudres/barriques (depending on lot/millésime) - moderate ageing to preserve freshness and minerality.

Aroma
Very aromatic - citrus (lemon, grapefruit), white-fleshed fruit, white flowers, hints of stone / flint / minerality
Taste
Beautiful tension, marked minerality, freshness, good density, elegant body. A fine bitterness on the finish (Ronceray signature) structures the wine and gives it finesse and length.
