The winemaker

Saumur Champigny, Saumur Blanc, Cabernet de Saumur, Coteaux de Saumur, Saumur Brut... So many appellations for a single terroir! It has to be said that the edge of the hillside between Saumur and Montsoreau on the road to Chinon is quite an exceptional terroir. Claude Bourguignon, a microbiologist specializing in soil composition, claims to have found similarities in the terroirs of Vouvray, Chablis, Champagne Crayeuse... Which in fact formed the edge of the Paris Basin before the first ice ages caused the sea to recede.
