The winemaker

Loris Guyon took over Domaine Barillot in Pouilly sur Loire following his BTS in Viticulture Œnologie in Beaune. After two years working on the estate alongside his now-retired predecessor, Loris now farms 10.5 hectares of Sauvignon Blanc and 0.20 hectares of Chasselas. Since the summer of 2024, Loris has been accompanied by Hermance, whom he met during his studies and who also graduated from a BTS Viti-Oeno in Beaune. We decided to work in a sustainable way. We care about the environment and are sensitive to the organic approach, which we promote and practice on a daily basis. We harvest by hand to preserve a high quality grape without crushing, to make healthy, expressive wines. Starting with the 2024 vintage, we treat each plot and soil separately, so as to let them express themselves through our wines. That's why we're presenting 5 different cuvées.
