Produced from the chasselas grape in the Middle Ages by Augustinian monks, the local wine was given the appellation pouilly-sur-loire in 1936. Now abandoned in favor of the more profitable Sauvignon, Chasselas produces low-acid, discreet wines of great finesse. The clay-silica terroir on which it was replanted here in 1991 suits it perfectly. This 2020 is fresh and well-balanced. It goes perfectly with white meats, sweetbreads, fish and shellfish.
