Trained at the Lycée de Montreuil-Bellay, Antoine Sanzay took over his grandparents' vineyard at the Cave de Saint-Cyr-en-Bourg. Settled in 1999, he also delivered his entire harvest to the cooperative for three years, before setting about gradually vinifying the estate's vines (grassed and cultivated under the rows). His potential is enviable, with 4 hectares in the Les Poyeux cru. "My grandfather was astonished to see his grandson recultivating his land, as he did before the war; I want to prove to him that he can trust me," he explains. The latest vintages offer greater precision in ageing and expression of fruit, and the white is proving to be one of the best of the new school of saumurois chenins. The cuvée les salles martin from domaine antoine sanzay comes from forty-year-old chenin vines planted on tufa and limestone terroir. Aged for 12 months in tuns, the wine underlines its purity and preserves its freshness.
