The grapes are hand-picked and sorted. The Syrah grapes are vinified separately. The entire harvest is destemmed. Cold pre-fermentation lasts 24 hours. Fermentation is temperature-controlled by a heat exchanger at 26-28°. We carry out delestages (2 to 3) during vinification. Traditional vatting lasts 25 to 30 days in vats. Next comes aging in ½ muids, which takes 12 months to bring the wine to maturity.
