La combe au mas is located at the foot of mont-ventoux in a cool, late-ripening microclimate influenced by the famous provence giant. The estate was created in 2019 by thomas ayoun and marie-sophie jullien. Their aim is to transcribe the typicity of this terroir into healthy, distinctive wines. The vineyard comprises 10 hectares of vines, planted at altitudes of 300 to 400m, on clay-limestone, pebble and silt soils. The winegrowers also cultivate a few plots of olive and cherry trees, polyculture being an essential part of their philosophy. A vegetable garden, fruit trees and a farmyard complete the agricultural project, which is carried out according to the principles of organic farming, respecting the soil, living beings and biodiversity. Vinification is carried out without inputs or sulfur. The grapes are fermented with their own indigenous yeasts. All cuvees are then aged in century-old terracotta amphorae. These large amphorae (2,000 to 4,000 liters) enable the wines to retain their fruitiness and characteristic freshness. The wines are lightly sulfured before bottling. This working philosophy enables
