Cuvée Marcelle is an orange maceration wine that pays tribute to Savoie's ancestral winegrowing history, and more broadly to that of the Allobroges, a Celtic people who cultivated vines long before the Roman Empire. The grapes for Cuvée Marcelle come from the steep hillsides around Chignin, in the Combe de Savoie region. The soils, composed of limestone scree and glacial clay, give the wine a fresh minerality and a structured structure. The mountain climate, with its strong thermal amplitudes, favors grapes that are both ripe and acidic, ideal for this style of wine. The grapes are harvested by hand, with a rigorous selection process. The bunches are then vatted whole and macerated on skins for several weeks, extracting color, fine tannins and complex aromas. Fermentation is spontaneous, with no oenological inputs. Aging lasts several months, before bottling without filtration or added sulfites. The color is orange. The nose is reminiscent of bitter orange tea, dried peel, chamomile and sweet spices. On the palate, the attack is lively, textured and structured by fine tannins.
