The Château Vari and its nature-loving owners

Since 1994, Yann and Sylvie Jestin have been at the helm of Château Vari. They have always favored working the land with a minimum of chemicals. In 2009, they decided to convert to organic farming. Certification was obtained for the entire vineyard as of the 2012 vintage. To showcase their products and expertise, the winemaking couple opened a wine bar and delicatessen on the estate.

The Château Vari and its successful conversion to organic farming

Château Vari's 22 hectares of clay-limestone soil are ideal for growing vines. But it's the appearance of a microscopic fungus that gives the terroir its special character. The famous "Botrytis Cinerea" fungus, also known as noble rot, enters the vines in autumn. The proximity of the river and the temperate climate allow the formation of morning fog. This humidity encourages the development of the fungus that is so important to the production of Monbazillac. Since the estate was converted to organic farming, the wines are even better and biodiversity is at its peak on the property. The couple also use ancient permaculture techniques to cultivate their vines with respect for nature.

Monbazillac's reputation precedes it. The intervention of noble rot on the grapes concentrates the sugars in the berries, producing a unique sweet wine. It represents Château Vari's main production. This is complemented by red, rosé and dry white Bergerac wines. The hard work of the winemakers and their relationship with the surrounding nature is paying off. The wines are well-balanced and of great finesse.
