Called méthode rurale, artisanal or ancestral, it is also known as méthode Gaillacoise. It involves bottling the wine early, before the alcoholic fermentation of the must is complete. Natural sugars from the grapes and yeast are thus locked up in the bottle, where alcoholic fermentation can be completed. It's the CO2 produced during this final stage of natural fermentation that gives the wine its effervescence. There is no second fermentation, and the wine is disgorged and capped.
