The grapes are harvested when perfectly ripe, then carefully sorted. Vinification is gentle, respecting the fruit. GRAVITI is aged mainly in stainless steel vats to preserve freshness and brightness. A very light period in wood completes the balance, without masking the wine's fruity character.
