In a few words ...
Traditional vinification with direct pressing and slow alcoholic fermentation at 16°C, partly in 500l new oak barrels. Slow natural degassing to preserve fruit aromas and varietal freshness, followed by transfer to 500l oak barrels for the portion vinified in vats.
