Golden color with greenish nuances. On the palate, citrus fruit, floral notes and hints of blackcurrant. Fresh, fruity and delicately mineral, intense, long on the palate with a crisp finish! The 'les cascadelles' vines are located on the best limestone and flint soils in the classified Pouilly region. The vines are on average 30 to 40 years old. The grapes are pressed in modern facilities, with pneumatic pressing to spare most of the harvest. Clarification is largely natural, and fermentation takes place under controlled temperatures for around three weeks, followed by maturation on fine lees for around six months. Only then can the wine be bottled and released for sale. The caves de pouilly sur loire cooperative is now one of the benchmark addresses for pouilly-fumé. The wines are based on the centuries-old traditions of the puilly-fumé wine-growing region, and highlight the misty typicity of the terroir. The result is exceptional white wines, fresh and straightforward, with a wonderful minerality.
