In a few words ...
100% destemming (for greater suppleness and finesse). Direct pressing at low pressure (pneumatic press) to extract the best juice. After cold settling, fermentation takes place in stainless steel tanks at low temperature. Aging on fine lees lasts a minimum of 5 months. A single filtration is carried out before bottling.
