Jean-François Ganevat is a leading figure in the Jura vineyards, renowned for his demanding, artisanal approach and deep respect for terroirs. Based in Rotalier, in southern Jura, he took over the family estate in 1998 after a spell with Jean-Marc Morey in Chassagne-Montrachet. Here, he develops biodynamic viticulture, with no synthetic inputs, and cellar work of rare precision, with natural vinifications and little or no sulfur. His impressively diverse range reflects an eye for detail and a quest for emotion in every cuvée. Poulsard les chonchons is a plot-based cuvée made from biodynamically farmed old vines planted on marl-limestone soils typical of the south-revermont region. This Poulsard seduces with its very clear color, its aromatic finesse and its delicacy on the palate. The nose reveals notes of fresh red fruit (redcurrant, raspberry), sweet spices and dried flowers. The palate is supple, fluid and light, with good acidity and a tasty, easily digestible finish. Vinified without added sulphur, this cuvée perfectly embodies the spirit of the domaine: authenticity, finesse and freedom of expression of its wines.
